Life has been so hectic for me here lately that unless it’s on my to do list, things don’t get done. I prep for work, writing, dinner….but not actually EATING. I need to lunch prep.
Last week, I couldn’t figure out why I had this massive headache. I’d gotten enough sleep, I’d had enough water, I’d exercised…wait…I…forgot to eat lunch. It’s not that I wasn’t hungry when lunch time came. It’s just that when the time came to eat lunch, I couldn’t find the time to go downstairs and fix myself something. And so I didn’t eat.
When I was able to function again later that day, I had to sit myself down and make a plan. Just like I have a dinner prep plan ( which includes things like take out the meat to unthaw), I decided to make a lunch prep plan. The plan was to prep lunch BEFORE lunch time. One more thing on my to-do list, yes! BUT making sure I fuel my body so I can be the best I can be is important.
The thing is, there are always leftovers. I cook dinner most nights and it would be a simple thing just to put everything in plastic containers and just reheat dinner the next day. My problem was…the many many many containers in my pantry had no lids…LOL. Plus, all of these containers would lead to dishes. And if I don’t have time to eat, I certainly don’t have time to wash extra dishes!
