- Preheat the oven to 375F. Grease a 9" pie pan and set aside. 
- In a medium skillet, melt butter over low heat. Once melted, add the thinly sliced onions and sprinkle in 1/4 tsp of salt. Continue to cook the onions on low, stirring occasionally, for 15 minutes until they are brown and soft. 
- While cooking onions, whisk the eggs, coconut milk, almond milk, 1/4 tsp of pepper, and the other 1/4 tsp of salt in a medium-sized bowl. Set aside. 
- Once the onions are ready, add in the minced garlic, saute for 30 seconds, and turn the heat off. 
- Begin to layer the onions evenly in the pie dish and sprinkle in the goat cheese chunks evenly as well. 
- Pour the egg mixture atop the onions and cheese. Using a fork, gently float some onions to the top so they are evenly intermixed and not at the bottom. 
- Bake for 30 mins, or until the egg mixture has set and isn’t jiggly. The time will vary depending on the size of your pan. 
- Let it cool for at least 15 minutes before slicing and serving.
