Crustless Goat Cheese Quiche

Ingredients

  • 1 small onion thinly sliced
  • 1 tbsp butter
  • 1/2 tsp salt divided
  • 1 tsp garlic minced
  • 5 large eggs
  • 1/2 cup unsweetened canned coconut milk
  • 1/2 cup almond milk
  • 1/4 tsp pepper
  • 4.5 oz. goat cheese cut into small chunks

Instructions

  • Preheat the oven to 375F. Grease a 9" pie pan and set aside.
  • In a medium skillet, melt butter over low heat. Once melted, add the thinly sliced onions and sprinkle in 1/4 tsp of salt. Continue to cook the onions on low, stirring occasionally, for 15 minutes until they are brown and soft.
  • While cooking onions, whisk the eggs, coconut milk, almond milk, 1/4 tsp of pepper, and the other 1/4 tsp of salt in a medium-sized bowl. Set aside.
  • Once the onions are ready, add in the minced garlic, saute for 30 seconds, and turn the heat off.
  • Begin to layer the onions evenly in the pie dish and sprinkle in the goat cheese chunks evenly as well.
  • Pour the egg mixture atop the onions and cheese. Using a fork, gently float some onions to the top so they are evenly intermixed and not at the bottom.
  • Bake for 30 mins, or until the egg mixture has set and isn’t jiggly. The time will vary depending on the size of your pan.
  • Let it cool for at least 15 minutes before slicing and serving.

Notes:
  • This quiche reheats well. Just pop it into the microwave for a minute or two and have a quick breakfast or lunch.
  • This recipe can be frozen, but please remember to do the following: freeze in individual portions as soon as it is cold enough and use a container or bag that is suitable for freezing.
