Easy Skillet Sausage and Peppers over Rice

Ingredients

  • 1 package of smoked Kielbasa sausage cut into coins
  • 1 Tablespoon of olive oil
  • 1 Medium Green Pepper chopped
  • 1 Medium Yellow Onion Chopped
  • 1 16 oz can of Stewed Tomatos
  • 1 8 oz can of Tomato sauce
  • 1 bag of Success® Boil-in-Bag Rice I used the Success® Whole Grain Brown Rice in this recipe

Instructions

  • In a large non stick skillet, brown sausage.
  • Remove the sausage and set aside
  • and add the olive oil
  • Add onions and green peppers in and stir until veggies are tender. About 5 minutes.
  • Add one can of stewed tomatoes, scraping the bottom of the pan to get up brown bits of sausage at the bottom of the pan( adds flavor!)
  • Turn heat down on the veggies and simmer.
  • While veggies are simmering, cook Success® Whole Grain Brown Rice as directed on packaging.
  • After 10 minutes, add sausage back in and top with 1/2 can of tomato sauce.
  • Cook until sausage is warm again.
  • serve over rice!
