- 1 pound of flank steak whole you can slice or buy it sliced also, but this recipe uses whole
- 3 Bell Peppers green, red, orange
- 1 Yellow onion sliced
- 1 pack of store-bought fajita seasoning or this recipe.
- 1/2 cup of Beef Broth
- Tortillas
- Optional
- Cheese
- Sour cream
- Pico De Gallo
- Guacamole
- Cilantro for garnish
Brown Flank steak on each side, about 2-3 minutes each side. You can do this on the stovetop on in the Instant Pot on the saute setting.
If you haven't already, place the Flank Steak in the Instant Pot.
Use half of your fajita seasoning on your flank steak, set the other half aside
Cover Flank steak with Veggies
Use rest of seasoning on top of everything
Add beef broth to the pot.
Cover with the lid. Set the valve to “sealing” position. Choose manual – high pressure and set the timer to 10 minutes. The Instant Pot will beep and start.
Allow the Instant Pot to come to pressure, then let it cook for 10 minutes. When finished, the instant pot, will beep again. Click on “cancel” and do a quick release by switching the valve to “venting” position.
Open your instant pot and drain the extra liquid (and retain some). You can also use a slotted spoon to take out the meat and veggies
Now! Stuff your warmed tortillas with the fajitas and toppings! Garnish with chopped cilantro leaves and drizzle over with a little bit of the reserved sauce over it all!
FAQ
I MADE THIS AND GOT A BIT TOO MUCH LIQUID, IS THAT NORMAL?
yes! When you make meat in the Instant Pot, it is always recommended to use 1/2 cup of water when cooking. Your meat and the veggies also make a liquid. Simply drain the liquid when done or use it on the fajitas!
WILL MY VEGGIES BE MUSHY?
YES! If you like them a bit crisper, saute them on the stove. However, I will say adding them to the pot adds flavor to your meat. So you can do both.
IS THIS RECIPE GLUTEN FREE?
Yes! If you use Gluten-free Tortillas and make your fajita seasoning it will be.
