My son and I, love mexican food. We love tacos, nachos, burritas, and of course, fajitas.

We had been eating a LOT of chicken lately, so I decided recently to make steak fajitas. In the Instant Pot.

And they were SO GOOD.

And easy.

Yes, you could make these on top of the stove! BUT let me tell you why the Instant Pot is the way:

  • The beef turns out so juicy, tender. Flank steak can be tough to cook.
  • Making fajitas in the Instant Pot is EASY. I can just set it to cook and do something else until it’s done.
  • It’s a one-pot recipe! No mess, no washing up! All I will have to wash is the IP pot.

Because let’s face it. We are all looking for easy weeknight meals. because I don’t know about you, but I don’t like being in the kitchen for a long time.

So Keep reading to find out how I made these Instant Pot Steak Fajitas.

What You Need to Make Instant Pot Steak Fajitas

  • An Instant Pot of course! I have a Ninja Foodi and love it so much! I use it almost every day.
  • Kitchen tongs
  • A slotted spoon to take out the fajitas at the end to serve.
  • Corn or flour tortilla bread, I use this brand. If you want gluten-free, we use this one.
  • Fajita spice mix, either make your own( see the recipe below) or get a Store-bought pack.
  • Flank Steak.( If you want meat delivered right to your door, check out these farm to table options)
  • Bell peppers – red, yellow, and green (thickly sliced).
  • Yellow onion
  • Beef broth ( recommended) but you can use vegetable stock or water.

Fajita Seasoning: Homemade vs store-bought

What is easier for you? If you are making this as a quick and easy recipe, by all means, use a store bought seasoning pack ( like I did for this recipe).

But if you want to make it yourself, it’s easy!

All you need is:

  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 1 tbsp paprika
  • 1 tbsp sea salt
  • 1 tbsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cayenne pepper

Mix them all together and store in an airtight container until ready to use.

How to Make Instant Pot Steak Fajitas

Brown Flank steak on each side, about 2-3 minutes each side. You can do this on the stovetop on in the Instant Pot on the saute setting.

If you haven’t already, place the Flank Steak in the Instant Pot.

Use half of your fajita seasoning on your flank steak, set the other half aside.

Cover your Flank steak with the chopped up veggies.

Use rest of seasoning on top of everything.

Add beef broth to the pot and cover with the lid.

Set the valve to “sealing” position. Choose manual – high pressure and set the timer to 10 minutes. The Instant Pot will beep and start.

Allow the Instant Pot to come to pressure, then let it cook for 10 minutes.

When finished, the instant pot, will beep again. Click on “cancel” and do a quick release by switching the valve to “venting” position.

Open your instant pot and drain the extra liquid (and retain some).

You can also use a slotted spoon to take out the meat and veggies

Slice up your flank steak…

Now! Stuff your warmed tortillas with the fajitas and toppings!

Garnish with chopped cilantro leaves and drizzle over with a little bit of the reserved sauce over it all!

Ingredients
  

  • 1 pound of flank steak whole you can slice or buy it sliced also, but this recipe uses whole
  • 3 Bell Peppers green, red, orange
  • 1 Yellow onion sliced
  • 1 pack of store-bought fajita seasoning or this recipe.
  • 1/2 cup of Beef Broth
  • Tortillas
  • Optional
  • Cheese
  • Sour cream
  • Pico De Gallo
  • Guacamole
  • Cilantro for garnish

FAQ

I MADE THIS AND GOT A BIT TOO MUCH LIQUID, IS THAT NORMAL?

yes! When you make meat in the Instant Pot, it is always recommended to use 1/2 cup of water when cooking. Your meat and the veggies also make a liquid. Simply drain the liquid when done or use it on the fajitas!

WILL MY VEGGIES BE MUSHY?

YES! If you like them a bit crisper, saute them on the stove. However, I will say adding them to the pot adds flavor to your meat. So you can do both.

IS THIS RECIPE GLUTEN FREE?

Yes! If you use Gluten-free Tortillas and make your fajita seasoning it will be.
