No Bake Eggnog Cheesecake Recipe

This easy No Bake Eggnog Cheesecake is the perfect dessert for your holiday parties, celebrations and Christmas dinner!

Ingredients

  • Crust:
  • 1- 1.5 cups biscoff cookies half a pack**
  • 2.5 tbsp melted Butter
  • 1 tbsp Brown Sugar
  • Filling:
  • 8 oz softened Cream Cheese
  • 1/2 cup Sugar
  • 1/4 cup Eggnog
  • 1/2 tsp Rum or Vanilla Extract
  • 1/2 tsp Nutmeg
  • 1/2 tsp Cinnamon
  • 8 oz Heavy Whipping Cream

Instructions for Ramekins



  • Crush Biscoff Cookies with a Rolling pin or food processor.


  • Add melted butter and brown sugar and stir to incorporate.


  • Add cookie crumble to bottom of ramekins


  • In a large mixing bowl, beat cream cheese and sugar until
    creamy.


  • Next beat in the eggnog, run or vanilla, nutmeg and cinnamon
    until creamy.


  • In a separate bowl Whip heavy cream until stiff peaks form
    (about 3-4 mins)


  • Fold whipped cream into eggnog mixture


  • Use an ice-cream scooper or large spoon to portion filling
    into ramekins


  • Spread evenly over the crust.


  • Refrigerate until ready to serve


  • Sprinkle crushed cookies or nutmeg over the top

Instructions for Jars



  • Crush Biscoff Cookies with a Rolling pin or food processor.


  • Add melted butter and brown sugar and stir to incorporate.


  • Add cookie crumble to bottom of jars


  • In a large mixing bowl, beat cream cheese and sugar until
    creamy.


  • Next beat in the eggnog, run or vanilla, nutmeg and cinnamon
    until creamy.


  • In a separate bowl Whip heavy cream until stiff peaks form
    (about 3-4 mins)


  • Fold whipped cream into eggnog mixture


  • Add the cheesecake mixture to a large piping bag


  • Cut off the top and pipe cheesecake into jar


  • Shake lightly to help the cheesecake settle over the crust.


  • Add more cookie crumble then cheesecake.


  • Repeat until jar is full.


  • Refrigerate until ready to serve


  • Sprinkle crushed cookies or nutmeg over the top

Notes

The ramekins will use LESS cookie crumble than the jars so
keep this in mind when making them.
 
You can also use cool whip in place of the heavy cream.  Fold the cool whip into the cheesecake filling
instead of the heavy cream.
 
Graham crackers, Nilla Wafers and Golden Oreos would all be
superb crust pairings for the eggnog cheesecake.
