Easy No Bake Eggnog Cheesecake Recipe

It’s the Most wonderful time of the year! It’s Eggnog season! This easy dessert is for you! It has tons of eggnog flavor and is made with Biscoff Cookies for the crust,eggnog, nutmeg making it a great holiday dessert that is perfect for serving at Christmas and holiday parties. This simple recipe is easy to make, and can be made in advance, and is ALWAYS a good idea.

The Holidays are notoriously busy. There is always a family gathering, school party, work party or something that demands that you take the time out of your busy day to bake a holiday treat. A great cheesecake is always a winner, but who has time to bake, cool and chill a cake?

Enter our no bake eggnog cheesecake recipe. This recipe is so much easier than a traditional cheesecake recipe, and won’t take much time to put together. It’s an easy twist of a traditional easy cheesecake recipe, but not be bogged down in the kitchen. And my favorite part? They go in little ramekins or small mason jars! These are the perfect holiday treat!

The recipe for both differs just slightly, but don’t worry! I’ll include both no-bake cheesecake recipes so you can decide what you want to make.

Easy No Bake Eggnog Cheesecake Recipe

Before you start, make sure you gather:

Small Ramekins or Mason Jars

Ice Cream Scoop or a Large Spoon

Piping Bags

An Electric Hand Mixer or Stand Mixer( with a paddle attachment)

What you need for the Crust:

***Biscoff cookies (half a pack)

Melted Butter

Brown Sugar

What you need for the filling of your No Bake Eggnog Cheesecake Recipe

Softened Cream Cheese

Sugar

Eggnog

Rum Extract or Vanilla Extract

Nutmeg

Cinnamon

Heavy Whipping Cream

Let’s Put Together Our Mini Eggnog Cheesecakes

Step 1: Let’s Make the Crust

One of my favorite things about this recipe is that instead of the classic graham cracker crust, we use Biscoff Cookies!

Crush your Biscoff Cookies with a Rolling pin or food processor.

Next, Add melted butter and brown sugar and stir to incorporate.

Finally, add cookie crumble to the bottom of the ramekins or the bottom of the jars or ramekins.

Step2: How to Make the No-Bake Cheesecake Filling

In a large mixing bowl, beat cream cheese and sugar until you have a creamy cream cheese mixture.

Next beat in the eggnog, run or vanilla, nutmeg and cinnamon until creamy.

In a separate small bowl Whip heavy cream on medium speed until stiff peaks form (about 3-4 mins)

Fold whipped cream into your eggnog mixture.

If you are using Ramekins:

Use an ice-cream scoop or large spoon to add your filling into the ramekins.

Spread your mixture evenly over the crust.

Refrigerate until ready to serve

Sprinkle crushed cookies or nutmeg over the top .

If you are using Jars:

Add your cheesecake mixture to a large piping bag.

Cut off the top and pipe your cheesecake mixture into jar

Shake lightly to help the cheesecake settle over the crust.

Make sure that you add more cookie crumble than cheesecake.

Repeat until the jar is full.

Refrigerate until ready to serve.

Sprinkle crushed cookies or nutmeg over the top

***Using Graham crackers, Nilla Wafers and Golden Oreos would all be superb crust pairings for the eggnog cheesecake.

  • 2.5 tbsp melted Butter
  • 1 tbsp Brown Sugar
  • Filling:
  • 8 oz softened Cream Cheese
  • 1/2 cup Sugar
  • 1/4 cup Eggnog
  • 1/2 tsp Rum or Vanilla Extract
  • 1/2 tsp Nutmeg
  • 1/2 tsp Cinnamon
  • 8 oz Heavy Whipping Cream

  • Add more cookie crumble then cheesecake.

  • Sprinkle crushed cookies or nutmeg over the top

Notes

The ramekins will use LESS cookie crumble than the jars so
keep this in mind when making them.
 
You can also use cool whip in place of the heavy cream.  Fold the cool whip into the cheesecake filling
instead of the heavy cream.
 
Graham crackers, Nilla Wafers and Golden Oreos would all be
superb crust pairings for the eggnog cheesecake.
