Can I tell you how much I love my mama’s Red Velvet Cake?
She only makes it once a year, at Christmas. So I spend the rest of the year dreaming of them, plotting my next bite.
But I don’t want a whole cake because lawd my waistline!
But the idea came to me to try…cookies…
With Valentines’ Day coming up, I felt like WHY NOT right?
So check out this easy to make Red Velvet Cookies with Cream Cheese Frosting recipe!
Red Velvet Cookies with Cream Cheese Icing
This recipe is really easy to make. The first thing you need to do is gather all of your ingredients so that you don’t end up going back and forth.
Next, cream the butter, sugar and cream cheese together in a mixing bowl until smooth.
Add in the egg yolk, vanilla and red food coloring (add enough to create the color you want, gel colors will require a lot less than liquid).
Whisk together all purpose flour, corn starch, salt and cocoa powder
On low speed add half of the dry ingredients until incorporated
Then add the remaining dry ingredients and mix until fully combined.
Bake 12-16 minutes.
Cool for 5 mins on the baking sheet before transferring to a cookie rack to cool completely 25- 30 mins.
Aren’t they cute???? And so so moist and chewy inside, like the cake and the cookie had a baby.
How to Make Cream Cheese Icing
Add all ingredients to a bowl
Mix until well combined, frosting will be thick and creamy.
Extra tip: The longer you mix the frosting the fluffier it will be due to the air being incorporated.
Spread onto your cookies and …..EAT THEM! LOL

Red Velvet Cookies for Valentine’s Day
Equipment
Ingredients
- 1 cup unsalted room temperature butter 4 oz softened cream cheese
- 1 cup granulated sugar
- 1 egg yolk
- 2 tsp vanilla extract
- Red gel or liquid food color
- 3 leveled cups All Purpose Flour 1/4 cup corn starch
- 1/4 cup unsweetened cocoa powder 1/2 tsp salt
Instructions
Preheat the oven to 375 degrees
Whisk together all purpose flour, corn starch, salt and cocoa powder and set aside.
Cream the butter, sugar and cream cheese together in a mixing bowl until smooth.
Add in the egg yolk, vanilla and red food coloring (add enough to create the color you want, gel colors will require a lot less than liquid).
Scrape down the sides of the bowl before adding in the dry ingredients.
On low speed add half of the dry ingredients until incorporated.
Then add the remaining dry ingredients and mix until fully combined.
Place half of the dough between two sheets of parchment paper and roll out the dough to the desired thickness. (You may need to add a little flour to the top and bottom to keep it from sticking if the dough feels wet.
Using a 3 inch cookie cutter, cut out your desired shapes
Bake 12-16 minutes.

Frost cookies with royal icing, glaze, buttercream or cream cheese frosting.

- ½ cup room temperature unsalted butter
- 1 tsp vanilla extract
- 4 cups powdered sugar
