I made the Meghan Markle Pasta Recipe. The One Pot One.
After about two weeks of thinking about it, I finally made the Meghan Markle Pasta ( the one pot one) recipe from her Netflix show.

I mean Meghan SUSSEX’s one Pot pasta ( or one pan spaghetti. What ever you want to call it. )
It was…delicious. OMG.
Of course me being me, I added things and subtracted others. For example, I used Gluten free Fettuccine in stead of spaghetti.
I used Chicken broth instead of water
And I added in shallots and herb butter and used Spinach and Arugula only. eliminating the ….
And cooked in all in my Le Creuset Braiser thank you very much.
It was FABULOUS.
I don’t feel like I need to say anything else except that yes I am going to try other recipes from the show. The Honey Lemon Layer cake is next on my list, but I might make those donuts today because it looks quick and easy and why not.
Also on my menu: the Tempora Fried Chicken, the ceviche and those potsitckers for sure.
Anyway, I just wanted to say this gets five out of five stars from me. And I’ve included my version of it below. Because isn’t that the best thing? To make someone else’s recipe your own?

The Meghan Markle Pasta Recipe

Ingredients
- Extra Virgin Olive Oil
- 1 Shallot
- 4 garlic cloves( minced)
- 3 cups of cherry tomatoes
- 4 cups of Chicken Broth
- 1 package of Gluten Free Pasta( I used Fettuccine noodles)
- Zest of one lemon
- salt to taste
- pepper to taste
- 2 tablespoons of Kerrygold Butter : Garlic and Herb
- One handful of spinach
- one handful of arugula
- Fresh basil for topping ( optional)
Instructions
- Add a generous amount of Extra Virgin Olive oil to a pot/skillet on medium heat .
- Add in shallots and saute for 2 minutes
- Add in garlic and saute until fragrant but not burned. about 1-2 minutes.
- Add in your tomatoes and a generous pinch of salt and saute for 3-4 minutes until they start to caramelize a little. ( it's going to add more flavor).
- Add in your pasta, lemon zest and broth. Cover, bring to a boil then reduce the heat and cook for about 6 minutes. Keep the lid on for the first few minutes to let the pasta steam, but check back occasionally to break up your pasta to make sure it's not clumping.
- Remove the lid and a stir your pasta just a bit again( this helps the gluten free pasta especially cook through) and turn up the heat to help reduce the sauce.
- Add in your spinach/arugula mix until well combined, then put the cover back on.
- Cook for another 6 minutes or so until your noodles are al dente.( be careful with gluten free pasta, you don't want it to over cook )
- Remove from the heat and add in cold butter and your grated parmesan cheese.
- Mix until well combined( the sauce should coat your pasta)
- Add in a little pepper, and a little more salt
- ENJOY
Notes
I used Barilla Brand Gluten Free Fettucine in this recipe because it will not break up and tastes like regular pasta. You literally cannot tell.
You can use regular pasta for this recipe. I will say to make sure you are following the cooking directions on the box
