This Crustless Goat Cheese Quiche is made with caramelized onions and goat cheese and is gluten free and grain-free. It tastes wonderfully indulgent but this Crustless Goat Cheese Quiche is perfect for breakfast for brunch.
I love quiche. LOVE IT. It is one of my favorite breakfast and brunch items to make at home. A good quiche is perfect to make at the beginning of the week as a part of meal planning.
Since my son is gluten free, I learned early on to make a crustless quiche. Not only in this gluten free, but it’s healthy and tastes great when reheated.
Ingredients Needed for My Crustless Goat Cheese Quiche
Eggs
Onion
Goat Cheese
Garlic
Coconut and Almond Milk
Butter
How to Make this Crustless Goat Cheese Quiche
Preheat your oven to 375F. Grease a 9″ pie pan and set it aside.
In a medium skillet, melt butter over low heat. Add the thinly sliced onions and sprinkle in 1/4 tsp of salt. Continue to cook the onions on low, stirring occasionally, for 15 minutes until they are brown and soft.
While cooking onions, whisk the eggs, coconut milk, almond milk, 1/4 tsp of pepper, and the other 1/4 tsp of salt in a medium-sized bowl. Set aside.
Once the onions are ready, add in the minced garlic, saute for 30 seconds, and turn the heat off.
Begin to layer the onions evenly in the pie dish and sprinkle in the goat cheese chunks evenly as well.
. Pour the egg mixture atop the onions and cheese. Using a fork, gently float some onions to the top so they are evenly intermixed and not at the bottom.
Bake for 30 mins, or until the egg mixture has set and isn’t jiggly. The time will vary depending on the size of your pan.
8. Let it cool for at least 15 minutes before slicing and serving.
Storage Instructions
- This quiche reheats well. Just pop it into the microwave for a minute or two and have a quick breakfast or lunch.
- This recipe can be frozen, but please remember to do the following: freeze in individual portions as soon as it is cold enough and use a container or bag that is suitable for freezing.

Can you use regular milk or do you have to use the coconut/almond milk?

you can use regular milk! we just used almond milk because we have lactose free folks in our house!
