Easy Strawberry Gluten Free Ice Cream Sandwich Recipe

Finding Gluten-free ice cream sandwiches for my son was always a challenge. So much so that I started making my own. One of my favorite versions of our homemade ice cream sandwiches was this easy strawberry version with simple ingredients that have the best results every time! 

You don’t need to be an expert to make these gluten free ice cream sandwiches! So let’s get started!  

Ingredients Needed for your Strawberry Gluten Free Ice Cream Sandwich recipe.

 Plain yogurt ( non-dairy depending on your dietary needs) 

 Coconut whipped topping

 Strawberries, diced into small pieces

 Vanilla extract

 Honey optional, to taste

 Gluten-free graham crackers( We Love these from Partake )

Simple Steps to Assemble Your Ice Cream Sandwiches

Line a casserole or baking dish with parchment paper. Set it aside.

Add yogurt, diced strawberries, vanilla extract, and honey in a medium mixing bowl. Mix well.

 Fold in coconut whipped topping until mixed well, and  Set it aside.

 Place half the graham crackers on the bottom of the lined dish.

Spread yogurt mixture in an even layer over graham crackers and top with remaining graham crackers.

 Freeze for 4 to 6 hours.

Remove from the freezer and cut into squares with a sharp knife. ( run it under hot water and dry before slicing. So this repeatedly in between slices) 

Let sit for a few minutes at room temperature to soften slightly before serving

Variations for this recipe:

This is easy. 

  • Simply use your own ice cream ( store-bought ice cream ) if you don’t have to make this gluten-free ice cream recipe dairy free, use flavored ice cream to switch up the flavor!
  • Use gluten free chocolate wafers instead of the gluten free graham crackers is also a hit. 
  • Add Sprinkles by Pressing the outside of each cut ice cream sandwich in the sprinkles.
  • Add Nuts: by pressing the ice cream part of the sandwich with chopped nuts  
  • Dip the ice cream sandwiches in dark chocolate: Dip a corner or the whole ice cream sandwiches in melted chocolate.

How to Store your Gluten Free Ice Cream Sandwich

Once cut, store any of your leftover gluten-free ice cream sandwiches in an airtight container or plastic bag in the freezer to protect from freezer burn for up to 3 months.

  • 1 cup strawberries diced into small pieces

  • 1/2-1 tbsp honey optional to taste
  • 8 gluten-free graham crackers
