So yesterday I made this Breakfast BLT for Pookah’s lunch…..
Wait, let me start at the beginning!
My son is at that age where peer pressure is setting in and he wants to stand out as little as possible and be like everyone else. He doesn’t want to give anyone a chance to point out anything different about him.
Food allergies of course, make this time in his life a little difficult because he can’t always eat the same things as his friends. Even his lunch ends up being different due to the restrictions that come from having a wheat allergy!
Lately, he has been asking me for sandwiches for lunch because that’s what all his friends have. We’ve tried this before, and I know from experience that this usually doesn’t go well. We’ve tried a variety of gluten free breads over the years and none of them really have stuck with us in terms of taste and texture.
But a few weeks ago, we saw the new Udi’s® Delicious White Bread at Publix in the gluten free section and Pookah decided to try again.
We came home and Pookah wanted to immediately try something. I made a basic turkey sandwich…..and he approved! The soft texture and delicious taste was a win in his book! (Mine too!) He took one to lunch…and then promptly decided that it was boring. LOL!
We tried all sorts of sandwiches for variety until one day, I got an idea….
A Breakfast BLT!!!
Pookah’s favorite thing EVER is breakfast. I’ve done a breakfast type lunch for him before, so I thought that maybe the Breakfast BLT would be a hit.
I decided to surprise him and build a Breakfast BLT for his lunch. It was really easy to make and REALLY hard not to eat my ingredients!
To make this sandwich, you will need:
- 2 Slices of Udi’s Gluten Free Bread ( we used to white bread, but they also have multigrain)
- 3 Slices of cooked bacon
- 2 pieces of bibb lettuce
- 2 Slices of tomato
- 1 Fried egg
- As much mayo as you like!
Build your sandwich like this: One slice of bread (mayo side up), lettuce, bacon, tomato slices, egg, remaining slice of bread (mayo side down). Cut in half (or not) and enjoy!
POOKAH LOVED IT! He couldn’t wait to tell me how even his teacher wanted his sandwich!

And since the slices are 30% larger, they are like conventional sandwich bread so that Pookah doesn’t feel different and his parents can enjoy the bread too.

OF COURSE, I DID!
- 2 slices Udi's gluten free white bread ( or multigrain)
- 1 Fried Egg
- 2 butter lettuce leaves
- 2 Slices tomatos
- 3 Slices cooked bacon
- 2 TBSP mayo
- 1. Toast 2 Slices of Udi's Gluten Free Bread
- 2. Spread Mayo on each slice of bread
- 3. Build your sandwich like this : Slice of bread (mayo side up), lettuce, bacon, tomato slices, egg, remaining slice of bread (mayo side down). Cut in half and enjoy!
